Italian Herb-Crusted Red Snapper

Ingredients

  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp chopped fresh oregano
  • 4 cloves garlic, minced
  • 1½ cups panko breadcrumbs
  • ¼ cup butter, melted
  • 6 (6-oz) snapper fillets
  • ⅓ cup Dijon mustard

Instructions

  1. Preheat oven to 425°F. Stir together herbs, garlic, panko, and melted butter in a bowl.
  2. Place fish fillets on a foil-lined rimmed baking sheet. Brush top of fillets with mustard; press panko mixture into mustard on fillets.
  3. Bake 12 to 15 minutes or until topping is golden brown and fish flakes with a fork.
