Parmesan-Herb Salmon
Garlic Mashed Potatoes and AsparagusIngredients
- 2 (6-oz) salmon fillets
- ⅛ tsp salt
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp chopped fresh parsley
- 1 clove garlic, minced
Instructions
- Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; sprinkle with salt. Bake 10 minutes.
- Combine cheese, parsley, and garlic. Top fish with cheese mixture; bake 5 minutes longer or until cheese is melted and fish flakes with a fork.
Side Dish Ingredients
- ½ lb asparagus, trimmed
- 2 tsp olive oil
- 2 small cloves garlic, minced and divided
- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 Tbsp chopped fresh parsley
Side Dish Instructions
- Preheat oven to 425°F. Toss together asparagus, oil, and 1 clove minced garlic on a rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until tender and lightly browned.
- Meanwhile, microwave mashed potatoes according to package directions. Reserve half of potatoes for another meal. Combine remaining mashed potatoes with 1 clove minced garlic in a bowl; microwave 1 minute longer. Stir in parsley.
