Garlic Mashed Potatoes and Asparagus

Ingredients

  • 2 (6-oz) salmon fillets
  • ⅛ tsp salt
  • ¼ cup freshly grated Parmesan cheese
  • 2 Tbsp chopped fresh parsley
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 425°F. Place fish on a greased rimmed baking sheet; sprinkle with salt. Bake 10 minutes.
  2. Combine cheese, parsley, and garlic. Top fish with cheese mixture; bake 5 minutes longer or until cheese is melted and fish flakes with a fork.

Side Dish Ingredients

  • ½ lb asparagus, trimmed
  • 2 tsp olive oil
  • 2 small cloves garlic, minced and divided
  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together asparagus, oil, and 1 clove minced garlic on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until tender and lightly browned.
  3. Meanwhile, microwave mashed potatoes according to package directions. Reserve half of potatoes for another meal. Combine remaining mashed potatoes with 1 clove minced garlic in a bowl; microwave 1 minute longer. Stir in parsley.
