Mozzarella Chicken

Arugula and Tomato Salad

Ingredients

  • ¾ cup shredded mozzarella cheese (or use Parmesan)
  • 2 Tbsp mayonnaise 
  • 1 lb boneless, skinless chicken breasts
  • ½ Tbsp Ranch seasoning mix 
  • ½ Tbsp olive oil

Instructions

  1. Combine cheese and mayonnaise in a bowl.
  2. Sprinkle chicken with seasoning mix. Cook chicken in hot oil in a large skillet over medium-high heat 6 minutes.
  3. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1½ tsp white wine vinegar
  • ⅛ tsp honey
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (5-oz) pkg baby arugula
  • ½ cup halved grape tomatoes

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, salt, and pepper in a large bowl. Add arugula and tomatoes; toss.
