Mozzarella Chicken
Arugula and Tomato Salad
Ingredients
- ¾ cup shredded mozzarella cheese (or use Parmesan)
- 2 Tbsp mayonnaise
- 1 lb boneless, skinless chicken breasts
- ½ Tbsp Ranch seasoning mix
- ½ Tbsp olive oil
Instructions
- Combine cheese and mayonnaise in a bowl.
- Sprinkle chicken with seasoning mix. Cook chicken in hot oil in a large skillet over medium-high heat 6 minutes.
- Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1½ tsp white wine vinegar
- ⅛ tsp honey
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg baby arugula
- ½ cup halved grape tomatoes
Side Dish Instructions
- Whisk together oil, vinegar, honey, salt, and pepper in a large bowl. Add arugula and tomatoes; toss.
