Dill Roasted Potatoes and Green Beans

Ingredients

  • 1 lb boneless, skinless chicken breasts, halved lengthwise
  • 1½ Tbsp olive oil
  • 1½ tsp chopped fresh dill (or use ½ tsp dried)
  • 2 small cloves garlic, minced
  • ½ tsp salt

Instructions

  1. Preheat oven to 425°F. Arrange chicken on a rimmed baking sheet. Combine oil, dill, and garlic; rub all over chicken. Sprinkle with salt.
  2. Bake 20 minutes or until chicken is done.

  • ¾ lb red potatoes, halved
  • 1 Tbsp olive oil
  • 1 Tbsp chopped fresh dill (or use 1½ tsp dried)
  • ⅛ tsp pepper
  • ⅛ tsp salt, divided
  • 1 (12-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, dill, pepper, and a dash of salt on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until potatoes are browned and tender, stirring after 10 minutes.
  3. Meanwhile, cook beans according to package directions. Sprinkle with a dash of salt.
