Bruschetta Steak Salad

Ingredients

  • ½ lb flank steak (or use skirt steak)
  • 2 Tbsp balsamic glaze, divided
  • ¼ tsp dried oregano
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1½ Tbsp olive oil
  • ¾ tsp Dijon mustard
  • 3 cups torn green leaf lettuce
  • ¼ cup freshly shredded Parmesan cheese
  • 3 Tbsp garlic-flavored bruschetta topping

Instructions

  1. Preheat grill or grill pan to medium-high heat. Drizzle steak with 1 Tbsp balsamic glaze; sprinkle with oregano and salt and pepper.
  2. Grill steak, covered, 5 to 6 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, whisk together oil, 1 Tbsp balsamic glaze, and mustard in a large bowl. Add lettuce, sliced steak, bruschetta topping, and cheese; toss.
  4. Divide between 2 plates.

Side Dish Ingredients

  • 1 tsp olive oil
  • 2 (1-oz) pieces focaccia
  • ¾ tsp Italian seasoning

Side Dish Instructions

  1. Preheat grill to medium-high heat. Drizzle oil on bread on a piece of foil; sprinkle with seasoning. Wrap bread in foil, sealing ends.
  2. Grill bread, covered, 3 to 5 minutes or until thoroughly heated.
