Bruschetta Steak Salad
Warm Herb Focaccia
Ingredients
- ½ lb flank steak (or use skirt steak)
- 2 Tbsp balsamic glaze, divided
- ¼ tsp dried oregano
- ⅛ tsp salt
- ⅛ tsp pepper
- 1½ Tbsp olive oil
- ¾ tsp Dijon mustard
- 3 cups torn green leaf lettuce
- ¼ cup freshly shredded Parmesan cheese
- 3 Tbsp garlic-flavored bruschetta topping
Instructions
- Preheat grill or grill pan to medium-high heat. Drizzle steak with 1 Tbsp balsamic glaze; sprinkle with oregano and salt and pepper.
- Grill steak, covered, 5 to 6 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, whisk together oil, 1 Tbsp balsamic glaze, and mustard in a large bowl. Add lettuce, sliced steak, bruschetta topping, and cheese; toss.
- Divide between 2 plates.
Side Dish Ingredients
- 1 tsp olive oil
- 2 (1-oz) pieces focaccia
- ¾ tsp Italian seasoning
Side Dish Instructions
- Preheat grill to medium-high heat. Drizzle oil on bread on a piece of foil; sprinkle with seasoning. Wrap bread in foil, sealing ends.
- Grill bread, covered, 3 to 5 minutes or until thoroughly heated.
