Skirt Steak with Peanut Sauce
Soba Noodle Salad
Ingredients
- ¾ lb skirt steak (or use flank steak)
- ⅓ cup coconut milk
- 3 Tbsp peanut butter
- ½ Tbsp lime juice
- ½ Tbsp gluten-free soy sauce
- ¼ tsp Sriracha hot sauce (optional)
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with desired amount of salt and pepper. Grill 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and Sriracha, if desired. Serve sauce with steak.

- ½ (8-oz) pkg soba noodles
- 2 Tbsp rice vinegar
- 1 Tbsp gluten-free soy sauce
- 1 Tbsp olive oil
- ½ cup thinly sliced radishes (about 3 small)
- 1 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook noodles according to package directions; drain and rinse with cold water to cool.
- Whisk together vinegar, soy sauce, and oil; pour over noodles.
- Add radishes and cilantro; toss.
