Skirt Steak with Peanut Sauce

Ingredients

  • ¾ lb skirt steak (or use flank steak)
  • ⅓ cup coconut milk
  • 3 Tbsp peanut butter
  • ½ Tbsp lime juice
  • ½ Tbsp gluten-free soy sauce
  • ¼ tsp Sriracha hot sauce (optional)

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with desired amount of salt and pepper. Grill 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and Sriracha, if desired. Serve sauce with steak.

Side Dish Ingredients

  • ½ (8-oz) pkg soba noodles
  • 2 Tbsp rice vinegar
  • 1 Tbsp gluten-free soy sauce
  • 1 Tbsp olive oil
  • ½ cup thinly sliced radishes (about 3 small)
  • 1 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook noodles according to package directions; drain and rinse with cold water to cool.
  2. Whisk together vinegar, soy sauce, and oil; pour over noodles.
  3. Add radishes and cilantro; toss.
