Whole Wheat Banana-Nut Bread
Ingredients
- 1¼ cups all-purpose flour
- ½ cup whole wheat flour
- 1½ tsp baking soda
- ¼ tsp salt
- ½ cup sugar
- ¼ cup canola oil
- 1 large egg
- 1 cup mashed banana
- 1 tsp vanilla extract
- ½ cup chopped walnuts
- ½ cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F. Whisk together flours, baking soda, and salt in a medium bowl.
- Combine sugar and oil in a large bowl; beat with an electric mixer on medium speed until pale.
- Add egg, and mix well. Add flour mixture and mashed banana alternately, beginning and ending with flour mixture. Stir in vanilla, nuts, and chocolate chips. Pour into an 8- x 4-inch loaf pan coated with cooking spray.
- Bake 40 to 50 minutes or until a wooden pick inserted comes out clean. Remove to a wire rack; cool completely before cutting into 16 thin slices.
