Whole Wheat Banana-Nut Bread

Ingredients

  • 1¼ cups all-purpose flour
  • ½ cup whole wheat flour
  • 1½ tsp baking soda
  • ¼ tsp salt
  • ½ cup sugar
  • ¼ cup canola oil
  • 1 large egg
  • 1 cup mashed banana
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts
  • ½ cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Whisk together flours, baking soda, and salt in a medium bowl.
  2. Combine sugar and oil in a large bowl; beat with an electric mixer on medium speed until pale.
  3. Add egg, and mix well. Add flour mixture and mashed banana alternately, beginning and ending with flour mixture. Stir in vanilla, nuts, and chocolate chips. Pour into an 8- x 4-inch loaf pan coated with cooking spray.
  4. Bake 40 to 50 minutes or until a wooden pick inserted comes out clean. Remove to a wire rack; cool completely before cutting into 16 thin slices.
