Southwest Chicken Soup

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 (32-oz) carton low-sodium chicken broth
- 1 (28-oz) can diced tomatoes
- 2 cups frozen corn kernels
- 1 cup chopped sweet onion
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 jalapeño pepper, seeded and minced
- 2 cloves garlic, minced
- 2 tsp chili powder
- 1 tsp ground cumin
- ½ tsp dried oregano
Instructions
- Sprinkle chicken lightly with pepper. Place in a 5- or 6-quart slow cooker.
- Stir in broth, tomatoes, corn, onion, celery, carrots, jalapeño, garlic, chili powder, cumin, and oregano.
- Cover and cook on LOW 6 to 8 hours.
- Shred chicken with 2 forks; stir into soup in cooker.
