Southwest Chicken Soup

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (28-oz) can diced tomatoes
  • 2 cups frozen corn kernels
  • 1 cup chopped sweet onion
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano

Instructions

  1. Sprinkle chicken lightly with pepper. Place in a 5- or 6-quart slow cooker.
  2. Stir in broth, tomatoes, corn, onion, celery, carrots, jalapeño, garlic, chili powder, cumin, and oregano.
  3. Cover and cook on LOW 6 to 8 hours.
  4. Shred chicken with 2 forks; stir into soup in cooker.
