White Chicken Chili-Stuffed Potatoes

Ingredients

  • 2 (8-oz) russet potatoes
  • Reserved cooked chili (from Quick White Chicken Chili recipe)
  • ¼ cup shredded reduced-fat Cheddar cheese
  • 2 Tbsp reduced-fat sour cream
  • ¼ cup fresh cilantro leaves

Instructions

  1. Prick potatoes several times with a fork.
  2. Place on a large plate, and microwave at HIGH 10 minutes or until done.
  3. Microwave chili at HIGH 2 to 3 minutes or until thoroughly heated.
  4. Cut potatoes in half and fluff with a fork. Top with chili, cheese, sour cream, and cilantro.
