White Chicken Chili-Stuffed Potatoes
Ingredients
- 2 (8-oz) russet potatoes
- Reserved cooked chili (from Quick White Chicken Chili recipe)
- ¼ cup shredded reduced-fat Cheddar cheese
- 2 Tbsp reduced-fat sour cream
- ¼ cup fresh cilantro leaves
Instructions
- Prick potatoes several times with a fork.
- Place on a large plate, and microwave at HIGH 10 minutes or until done.
- Microwave chili at HIGH 2 to 3 minutes or until thoroughly heated.
- Cut potatoes in half and fluff with a fork. Top with chili, cheese, sour cream, and cilantro.
