Beef, Broccoli, and Cabbage Soup
Ingredients
- 6 cups low-sodium beef broth
- 1 onion, thinly sliced
- Reserved cooked beef (from Ginger Beef over Soba Noodles recipe), chopped
- 1 (12-oz) pkg broccoli florets
- 1 (8-oz) pkg sliced baby bella mushrooms
- 1 red bell pepper, chopped
- 1 Tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 1 tsp rice vinegar
- ¼ tsp crushed red pepper
- 1 small head napa cabbage, thinly sliced
- 8 green onions, cut into 1-inch pieces
Instructions
- Combine broth and onion in a large saucepan; bring to a boil. Stir in beef, broccoli, mushrooms, and bell pepper; cook 4 minutes.
- Stir in soy sauce, sesame oil, vinegar, and red pepper; simmer 10 minutes.
- Add cabbage and green onions; simmer 5 minutes or until cabbage is tender.
