Mozzarella-Tomato Chicken
Lemon-Dill Broccoli SlawIngredients
- 3 (6-oz) boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 cup halved grape tomatoes
- 6 Tbsp chopped pitted kalamata olives
- 2 oz fresh mozzarella pearls, halved
Instructions
- Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, combine tomatoes, olives, and cheese. Serve with chicken.

- 2 Tbsp pine nuts
- 1 lemon
- 2 Tbsp olive-oil mayonnaise
- 2 Tbsp chopped sweet onion
- 2 Tbsp chopped fresh dill
- 1½ Tbsp extra virgin olive oil
- 1½ tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- ½ (16-oz) pkg broccoli slaw
Side Dish Instructions
- Toast nuts in a small dry skillet over medium heat until fragrant.
- Grate zest and squeeze juice from lemon into a bowl. Whisk in mayonnaise, onion, dill, oil, honey, salt, and pepper.
- Add slaw; toss. Sprinkle with nuts.
