Chicken Breasts with Tomato Orzo

Ingredients
- 4 oz whole wheat orzo
- 2 boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried oregano
- 1 Tbsp olive oil
- ¼ tsp crushed red pepper
- 1 clove garlic, minced
- 1 cup organic grape tomatoes
- 1 (5-oz) pkg organic baby spinach
- 1 Tbsp chopped fresh basil (or use 1 tsp dried)
- ½ Tbsp lemon juice
Instructions
- Cook orzo according to package directions.
- Meanwhile, rub chicken with salt, black pepper, and oregano. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet, and keep warm.
- Add red pepper, garlic, and tomatoes to drippings in skillet; cook 6 minutes or until tomatoes begin to burst.
- Add spinach; sauté 3 minutes or until wilted. Stir in basil and lemon juice; spoon mixture over chicken, and serve over orzo.
