Chicken Breasts with Tomato Orzo

Ingredients

  • 4 oz whole wheat orzo
  • 2 boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried oregano
  • 1 Tbsp olive oil
  • ¼ tsp crushed red pepper
  • 1 clove garlic, minced
  • 1 cup organic grape tomatoes
  • 1 (5-oz) pkg organic baby spinach
  • 1 Tbsp chopped fresh basil (or use 1 tsp dried)
  • ½ Tbsp lemon juice

Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, rub chicken with salt, black pepper, and oregano. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add red pepper, garlic, and tomatoes to drippings in skillet; cook 6 minutes or until tomatoes begin to burst.
  4. Add spinach; sauté 3 minutes or until wilted. Stir in basil and lemon juice; spoon mixture over chicken, and serve over orzo.
