Creamy Dijon-Lemon Pork Chops

Ingredients

  • ½ lb boneless center cut pork loin chops
  • ¼ tsp dried crushed rosemary
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ¼ cup low-sodium chicken broth
  • ¼ cup heavy cream
  • 2 tsp Dijon mustard
  • 2 tsp lemon juice

Instructions

  1. Sprinkle pork with rosemary, salt, and pepper. Cook pork in hot oil a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done; remove pork from skillet, and keep warm.
  2. Add broth, cream, and mustard to same skillet. Bring to a boil; simmer 5 minutes or until thickened. Stir in lemon juice.
  3. Spoon sauce over pork.

  • ½ lb green beans, trimmed
  • 2 tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions; keep warm.
  2. Meanwhile, steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Transfer beans to a bowl. Add oil, salt, and pepper; toss.
