Spicy Maple Pork Chops
Wilted Kale and Fried Apple Salad
Ingredients
- 2 boneless pork chops, trimmed
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp crushed red pepper
- ¼ cup pure maple syrup
- 2 Tbsp fresh lemon juice
Instructions
- Sprinkle pork with salt, black pepper, and red pepper in a small baking dish. Stir together syrup and lemon juice; pour over pork. Chill 30 minutes, turning pork occasionally. Remove pork from refrigerator, and let stand 10 minutes.
- Preheat grill to medium heat. Remove pork from dish, reserving marinade. Transfer marinade to a saucepan; bring to a boil, and cook 1 minute.
- Grill pork on a grill rack coated with cooking spray, covered, 3 to 4 minutes per side or until pork is done, turning and basting with marinade occasionally.
Side Dish Ingredients
- 1 Tbsp ghee
- 1 Tbsp avocado oil
- 1 apple, peeled and sliced
- ½ red onion, halved and sliced
- 1 bunch kale, trimmed and coarsely chopped
- 1 Tbsp balsamic vinegar
- ½ Tbsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Melt ghee with oil in a large skillet over medium-high heat. Add apple and onion. Sauté 6 to 8 minutes or until browned and tender. Transfer to a bowl.
- Reduce heat to medium. Add kale to skillet. Cover and wilt 3 minutes, stirring occasionally. Transfer kale to bowl.
- Whisk together vinegar, mustard, salt, and pepper. Add to apple salad; toss.
