Spicy Maple Pork Chops

Wilted Kale and Fried Apple Salad

Ingredients

  • 2 boneless pork chops, trimmed
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp crushed red pepper
  • ¼ cup pure maple syrup
  • 2 Tbsp fresh lemon juice

Instructions

  1. Sprinkle pork with salt, black pepper, and red pepper in a small baking dish. Stir together syrup and lemon juice; pour over pork. Chill 30 minutes, turning pork occasionally. Remove pork from refrigerator, and let stand 10 minutes.
  2. Preheat grill to medium heat. Remove pork from dish, reserving marinade. Transfer marinade to a saucepan; bring to a boil, and cook 1 minute.
  3. Grill pork on a grill rack coated with cooking spray, covered, 3 to 4 minutes per side or until pork is done, turning and basting with marinade occasionally.

Side Dish Ingredients

  • 1 Tbsp ghee
  • 1 Tbsp avocado oil
  • 1 apple, peeled and sliced
  • ½ red onion, halved and sliced
  • 1 bunch kale, trimmed and coarsely chopped
  • 1 Tbsp balsamic vinegar
  • ½ Tbsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Melt ghee with oil in a large skillet over medium-high heat. Add apple and onion. Sauté 6 to 8 minutes or until browned and tender. Transfer to a bowl.
  2. Reduce heat to medium. Add kale to skillet. Cover and wilt 3 minutes, stirring occasionally. Transfer kale to bowl.
  3. Whisk together vinegar, mustard, salt, and pepper. Add to apple salad; toss.
