Almond-Crusted Fried Catfish

Ingredients

  • 2 large eggs
  • 1 cup almond flour
  • 1 tsp garlic salt
  • 4 (6-oz) catfish fillets
  • 1 cup canola oil
  • Lemon wedges (optional)

Instructions

  1. Beat eggs lightly in a shallow dish. Stir together flour and garlic salt in a second shallow dish. Dip fish in egg, letting excess drip off. Dredge in flour mixture to coat.
  2. Heat oil in a large skillet over medium heat until oil reads 350°F on a thermometer.
  3. Cook fish in hot oil over medium heat until golden brown and fish flakes with a fork.
  4. Serve fish with lemon wedges, if desired, and Cocktail Sauce recipe.

  • 1 (12-oz) pkg green beans
  • 1 Tbsp butter
  • ½ tsp salt
  • 2 tsp lemon juice, divided
  • 6 Tbsp sugar-free ketchup
  • 1 tsp prepared horseradish

Side Dish Instructions

  1. Cook green beans according to package directions. Toss with butter, salt, and 1 tsp lemon juice in a bowl while still hot.
  2. Stir together ketchup, 1 tsp lemon juice, and horseradish in a small bowl. Serve with fish.
