Almond-Crusted Fried Catfish
Quick Green Beans and Cocktail SauceIngredients
- 2 large eggs
- 1 cup almond flour
- 1 tsp garlic salt
- 4 (6-oz) catfish fillets
- 1 cup canola oil
- Lemon wedges (optional)
Instructions
- Beat eggs lightly in a shallow dish. Stir together flour and garlic salt in a second shallow dish. Dip fish in egg, letting excess drip off. Dredge in flour mixture to coat.
- Heat oil in a large skillet over medium heat until oil reads 350°F on a thermometer.
- Cook fish in hot oil over medium heat until golden brown and fish flakes with a fork.
- Serve fish with lemon wedges, if desired, and Cocktail Sauce recipe.

- 1 (12-oz) pkg green beans
- 1 Tbsp butter
- ½ tsp salt
- 2 tsp lemon juice, divided
- 6 Tbsp sugar-free ketchup
- 1 tsp prepared horseradish
Side Dish Instructions
- Cook green beans according to package directions. Toss with butter, salt, and 1 tsp lemon juice in a bowl while still hot.
- Stir together ketchup, 1 tsp lemon juice, and horseradish in a small bowl. Serve with fish.
