Sirloin Steak and Green Bean Stir-Fry
Sesame Bok ChoyIngredients
- 2 lb top sirloin steak, cut into ½-inch pieces
- 3 Tbsp vegetable oil, divided
- 2 Tbsp dark sesame oil
- 1 (8-oz) pkg thin green beans, halved
- ½ onion, thinly sliced
- 1 red bell pepper, thinly sliced
- ½ cup sliced water chestnuts, drained
- 1 cup low-sodium beef broth
- ¼ cup low-sodium soy sauce
- 2 tsp cornstarch
- ½ tsp crushed red pepper (optional)
Instructions
- Brown steak, in two batches, in 1½ Tbsp hot vegetable oil per batch in a large skillet over medium-high heat; remove from skillet, and set aside.
- Heat sesame oil in skillet over medium-high heat; add beans, onion, and bell pepper. Cook 6 minutes, stirring constantly; add water chestnuts.
- Whisk together broth, soy sauce, cornstarch, and, if desired, red pepper.
- Add steak and broth mixture to skillet. Bring to a simmer, reduce heat, and cook until sauce is slightly thickened and steak is done.
Side Dish Ingredients
- 3 Tbsp dark sesame oil
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp rice vinegar
- 8 cups chopped bok choy
Side Dish Instructions
- Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook in a nonstick skillet over medium-high heat until tender.
