Sirloin Steak and Green Bean Stir-Fry

Ingredients

  • 2 lb top sirloin steak, cut into ½-inch pieces
  • 3 Tbsp vegetable oil, divided
  • 2 Tbsp dark sesame oil
  • 1 (8-oz) pkg thin green beans, halved
  • ½ onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • ½ cup sliced water chestnuts, drained
  • 1 cup low-sodium beef broth
  • ¼ cup low-sodium soy sauce
  • 2 tsp cornstarch
  • ½ tsp crushed red pepper (optional)

Instructions

  1. Brown steak, in two batches, in 1½ Tbsp hot vegetable oil per batch in a large skillet over medium-high heat; remove from skillet, and set aside.
  2. Heat sesame oil in skillet over medium-high heat; add beans, onion, and bell pepper. Cook 6 minutes, stirring constantly; add water chestnuts.
  3. Whisk together broth, soy sauce, cornstarch, and, if desired, red pepper.
  4. Add steak and broth mixture to skillet. Bring to a simmer, reduce heat, and cook until sauce is slightly thickened and steak is done.

Side Dish Ingredients

  • 3 Tbsp dark sesame oil
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 8 cups chopped bok choy

Side Dish Instructions

  1. Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook in a nonstick skillet over medium-high heat until tender.
