Sheet Pan Greek Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 2 red bell peppers, cut into chunks
  • 1 red onion, cut crosswise into rings
  • ¼ cup olive oil
  • 2 Tbsp minced garlic
  • 20 pitted kalamata olives
  • 1 Tbsp chopped fresh oregano
  • Crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 425°F. Toss together chicken, bell peppers, onion, oil, garlic, and desired amount of salt and pepper on a large rimmed baking sheet. Spread in a single layer. Bake 20 to 25 minutes or until chicken is done.
  2. Stir olives and oregano into bell pepper mixture on pan. Sprinkle with cheese, if desired.

Side Dish Ingredients

  • 1 (10-oz) pkg angel hair coleslaw
  • ½ cup Greek dressing
  • ½ cup crumbled feta cheese
  • 2 green onions, chopped
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss slaw with dressing in a large bowl. Stir in cheese, onions, salt, and pepper. Chill until ready to serve.
