Chicken and Hash Brown Casserole
Secret Sauce Roasted BroccoliIngredients
- 1 (32-oz) pkg frozen shredded hash browns, partially thawed
- 2 cups shredded Cheddar cheese, divided
- 1 tsp salt
- ½ tsp pepper
- ¼ cup olive oil
- 3 lb boneless, skinless chicken breasts
- 1½ cups barbecue sauce
Instructions
- Preheat oven to 375°F. Gently toss hash browns, 1 cup Cheddar cheese, salt, pepper, and oil in a greased 13-x 9-inch baking dish.
- Season chicken with salt and pepper; coat with barbecue sauce, and place on hash browns.
- Bake 45 minutes or until chicken is done.
- Reserve 1 lb baked chicken for Barbecue Chicken Flatbreads recipe. Sprinkle remaining chicken in dish with 1 cup cheese, and return to oven just until melted.
Side Dish Ingredients
- 1½ lb broccoli, cut into florets
- 4 cloves garlic, minced
- 1 Tbsp balsamic vinegar
- 2 tsp brown sugar
- 2 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 350°F. Spread broccoli and garlic on a baking sheet.
- Whisk together vinegar, sugar, and oil; pour over broccoli, and toss. Season with desired amount of salt and pepper.
- Bake 20 to 30 minutes until broccoli is tender, stirring once.
