Chicken and Hash Brown Casserole

Ingredients

  • 1 (32-oz) pkg frozen shredded hash browns, partially thawed
  • 2 cups shredded Cheddar cheese, divided
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 3 lb boneless, skinless chicken breasts
  • 1½ cups barbecue sauce

Instructions

  1. Preheat oven to 375°F. Gently toss hash browns, 1 cup Cheddar cheese, salt, pepper, and oil in a greased 13-x 9-inch baking dish.
  2. Season chicken with salt and pepper; coat with barbecue sauce, and place on hash browns.
  3. Bake 45 minutes or until chicken is done.
  4. Reserve 1 lb baked chicken for Barbecue Chicken Flatbreads recipe. Sprinkle remaining chicken in dish with 1 cup cheese, and return to oven just until melted.

Side Dish Ingredients

  • 1½ lb broccoli, cut into florets
  • 4 cloves garlic, minced
  • 1 Tbsp balsamic vinegar
  • 2 tsp brown sugar
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 350°F. Spread broccoli and garlic on a baking sheet.
  2. Whisk together vinegar, sugar, and oil; pour over broccoli, and toss. Season with desired amount of salt and pepper.
  3. Bake 20 to 30 minutes until broccoli is tender, stirring once.
