Barbecue Chicken Flatbreads
Apples with Honey and Nuts
Ingredients
- 1 (15-oz) can whole kernel corn, drained
- 1 (15-oz) can black beans, drained and rinsed
- 6 naan flatbreads
- 2 cups shredded mozzarella cheese (or use Cheddar)
- 1 lb chopped cooked chicken (from Chicken and Hash Brown recipe)
- 1 cup barbecue sauce
Instructions
- Preheat oven to 350°F. Combine corn and beans.
- Top naan with cheese, corn mixture, and chopped chicken on a large baking sheet. Drizzle with barbecue sauce.
- Bake 10 to 15 minutes or until cheese is melted.
Side Dish Ingredients
- ⅓ cup chopped almonds (or use any nuts)
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
- 4 apples (preferably a sweet, crisp variety), cored and chopped
- ⅓ cup sweetened dried cranberries
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant. Whisk together lemon juice and honey in a bowl; toss with apples.
- Sprinkle with nuts and cranberries.
