Barbecue Chicken Flatbreads

Ingredients

  • 1 (15-oz) can whole kernel corn, drained
  • 1 (15-oz) can black beans, drained and rinsed
  • 6 naan flatbreads
  • 2 cups shredded mozzarella cheese (or use Cheddar)
  • 1 lb chopped cooked chicken (from Chicken and Hash Brown recipe)
  • 1 cup barbecue sauce

Instructions

  1. Preheat oven to 350°F. Combine corn and beans.
  2. Top naan with cheese, corn mixture, and chopped chicken on a large baking sheet. Drizzle with barbecue sauce.
  3. Bake 10 to 15 minutes or until cheese is melted.

Side Dish Ingredients

  • ⅓ cup chopped almonds (or use any nuts)
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 4 apples (preferably a sweet, crisp variety), cored and chopped
  • ⅓ cup sweetened dried cranberries

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant. Whisk together lemon juice and honey in a bowl; toss with apples.
  2. Sprinkle with nuts and cranberries.
