Creamy Chicken and Broccoli Skillet

- 2 lb boneless, skinless chicken breasts, cubed
- 1 Tbsp olive oil
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 2 (12-oz) pkg broccoli florets
- 2 (10.5-oz) cans cream of mushroom soup
Instructions
- Cook chicken in hot oil in a large skillet over medium-high heat 10 minutes or until browned. Season lightly with salt and pepper.
- Meanwhile, cook rice and broccoli separately according to package directions. Add broccoli and soup to skillet with chicken; cook 4 minutes or until thoroughly heated. Serve over rice.
