Creamy Chicken and Broccoli Skillet

Ingredients

  • 2 lb boneless, skinless chicken breasts, cubed
  • 1 Tbsp olive oil
  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 (12-oz) pkg broccoli florets
  • 2 (10.5-oz) cans cream of mushroom soup

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 10 minutes or until browned. Season lightly with salt and pepper.
  2. Meanwhile, cook rice and broccoli separately according to package directions. Add broccoli and soup to skillet with chicken; cook 4 minutes or until thoroughly heated. Serve over rice.
