Sun-Dried Tomato Pesto-Sausage Pasta

Ingredients

  • ½ (16-oz) pkg ziti pasta
  • ½ lb sweet Italian sausage
  • ½ (8-oz) pkg whole mushrooms, quartered
  • ½ jar sun-dried tomato pesto
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Meanwhile, cook sausage and mushrooms in a large skillet over medium-high heat until sausage is browned and crumbly; drain, if necessary.
  3. Add pesto, reserved pasta water, and cheese to skillet; cook over medium heat until cheese is melted. Return sausage mixture to skillet; cook 2 minutes. Toss with pasta.

Side Dish Ingredients

  • 1 crown broccoli, cut into florets
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss all ingredients on a rimmed baking sheet. Bake 10 minutes or until broccoli is browned and tender.
