Ingredients

  • 2 (12.5-oz) cans chopped cooked chicken
  • 1 (24-oz) pkg refrigerated sour cream and chive mashed potatoes
  • 2 cups panko breadcrumbs, divided
  • 1 cup shredded Parmesan cheese
  • 3 Tbsp chopped fresh basil
  • 6 Tbsp olive oil, divided

Instructions

  1. Combine chicken, potatoes, 1 cup panko, cheese, and basil in a large bowl; season lightly with salt and pepper. Shape mixture into 18 patties. Dredge patties in 1 cup panko to coat.
  2. Cook patties, in batches, in 3 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat until browned and crisp.
  3. Divide patties among 6 plates.

Side Dish Ingredients

  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 2 cups frozen baby lima beans
  • 1 (12-oz) pkg frozen whole kernel corn
  • ½ cup chicken broth
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Sauté onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Stir in lima beans, corn, broth, and salt and pepper to taste; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender. Stir in tomatoes.
