Tuscan Chicken Sausage Pasta

Ingredients

  • 4 oz whole-grain linguine
  • 1 (12-oz) pkg Italian chicken sausage links, sliced
  • 1 cup grape tomatoes, halved
  • 1 clove garlic, minced
  • 2 tsp olive oil, divided
  • ½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • ¼ cup chicken broth
  • 1 cup fire-roasted tomato pasta sauce
  • 3 Tbsp heavy cream
  • 3 cups baby spinach
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions, reserving ¼ cup pasta water .
  2. Meanwhile, cook sausage, tomatoes, and garlic in 1 tsp hot oil in a skillet over medium-high heat 5 to 6 minutes or until tomatoes are blistered. Remove from skillet.
  3. Cook chicken in 1 tsp hot oil in skillet in over medium-high heat 5 to 6 minutes or until browned. Add broth; cook 2 minutes, scraping bottom of skillet with a wooden spoon to loosen browned bits.
  4. Stir in pasta sauce and cream; bring to a simmer, reduce heat, and cook 2 minutes. Gradually stir in spinach until wilted.
  5. Add sausage mixture to skillet; cook 1 minute. Toss chicken mixture with pasta and reserved ¼ cup pasta water. If desired, serve sprinkled with cheese.
