Salmon with Rosemary-Mustard Butter

Ingredients

  • 1 lb salmon fillet
  • 2 Tbsp butter, softened
  • 1 Tbsp Dijon mustard
  • ½ tsp dried crushed rosemary

Instructions

  1. Preheat oven to 425°F. Place salmon on a foil-lined rimmed baking sheet; lightly season with salt and pepper.
  2. Combine butter, mustard, and rosemary; spread over salmon. Bake 12 to 15 minutes or until salmon flakes with a fork.

Side Dish Ingredients

  • 1 (8.8-oz) pouches microwavable long-grain and wild rice
  • 1 Tbsp extra virgin olive oil, divided
  • ¼ tsp dried thyme
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Microwave rice according to package directions; toss with 2 tsp oil and thyme.
  2. Cook green beans according to package directions; toss with 1 tsp oil. Season with salt and pepper to taste.
