Grilled Flank Steak

Ingredients

  • ½ lb flank steak, trimmed
  • 2 tsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ½ tsp ground cumin
  • ¼ tsp dried oregano

Instructions

  1. Preheat grill to medium-high heat. Rub steak with oil. Combine salt, pepper, cumin, and oregano; rub over both sides of steak.
  2. Grill steak, covered with grill lid, 8 to 10 minutes per side or to desired doneness. Let stand 5 minutes before slicing across the grain.

Side Dish Ingredients

  • 3 ears corn
  • 1 Tbsp olive oil, divided
  • 1 cup grape tomatoes, halved
  • 2 Tbsp chopped fresh basil

Side Dish Instructions

  1. Preheat grill to medium-high heat. Rub corn with ½ Tbsp oil; lightly sprinkle with salt and pepper. Grill corn, covered with grill lid, 8 to 10 minutes until corn is tender and charred, turning occasionally.
  2. Remove kernels from corn, discarding cobs. Toss together corn kernels, tomatoes, basil, and ½ Tbsp olive oil in a serving bowl; season with salt and pepper to taste.
