Rosemary-Dijon Chicken
Apple, Brussels Sprouts, and Grains SaladIngredients
- 3 Tbsp olive oil, divided
- 2 Tbsp maple syrup
- 2 Tbsp Dijon mustard
- 1 Tbsp apple cider vinegar
- 3 cloves garlic, minced
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp chopped fresh rosemary
Instructions
- Combine 2 Tbsp oil, syrup, mustard, vinegar, and garlic in a small bowl.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in 1 Tbsp hot oil a large skillet over medium-high heat 5 minutes per side or until browned.
- Add oil mixture and rosemary to skillet, turning to coat chicken, and cook 2 to 3 minutes or until chicken is done.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable seven whole-grains mix
- 1 onion, chopped
- 1 (9-oz) pkg shaved Brussels sprouts (or use chopped kale or spinach)
- 1 Tbsp olive oil
- 1 Honeycrisp apple, sliced
- ½ cup crumbled goat cheese (or use feta)
- ⅓ cup glazed pecans, chopped
Side Dish Instructions
- Cook grains according to package directions.
- Meanwhile, cook onion and Brussels sprouts in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Add apple; cook 3 minutes or until tender.
- Add grains, cheese, and nuts to skillet; cook 1 minute or until thoroughly heated.
