Ranch Cucumbers
Ingredients
- 4 tsp mayonnaise
- 1 Tbsp chopped fresh basil
- ¼ tsp lemon juice
- 2 oz sharp Cheddar cheese
- 4 large romaine lettuce leaves
- 6 oz low-sodium deli-sliced roast beef (see Note)
- 1 small avocado, diced
Instructions
- Combine mayonnaise, basil, and lemon juice in a small bowl. Cut cheese into 8 pieces.
- Top lettuce leaves with mayonnaise mixture, cheese, roast beef, and avocado.
Side Dish Ingredients
- 2 Tbsp Ranch dressing
- ¾ cup sliced cucumbers
- ⅛ tsp pepper
Side Dish Instructions
- Drizzle dressing over cucumber; season with pepper.
