Mozzarella Burgers Marinara

Ingredients

  • 2 lb ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (8-oz) pkg sliced baby portobello mushrooms
  • 2 Tbsp olive oil
  • 1 pint grape tomatoes
  • 1 (24-oz) jar marinara sauce
  • 6 (1-oz) slices part-skim mozzarella cheese 
  • 2 Tbsp fresh basil leaves, torn

Instructions

  1. Combine beef, salt, and pepper. Shape into 6 patties. Cook, in 2 batches if needed, in a large skillet over medium-high heat 5 to 6 minutes per side or until no longer pink.
  2. Remove from skillet; keep warm, and wipe skillet clean.
  3. Sauté mushrooms in hot oil in skillet 5 minutes or until tender. Stir in tomatoes and marinara; cook 3 to 4 minutes or until thoroughly heated.
  4. Nestle burgers in sauce, and top with cheese; cook 1 minute or until cheese is melted. Sprinkle with basil.

Side Dish Ingredients

  • 2 (14-oz) pkg zucchini spirals (see Note)
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook zucchini, seasoning, salt, pepper, and garlic in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
