Swiss Cheese and Asparagus Frittata

Ingredients
- 1 Tbsp butter
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 red bell pepper, finely chopped
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 8 large eggs
- 2 Tbsp freshly shredded Parmesan cheese
- 1 Tbsp milk
- ½ tsp salt
- ¾ cup shredded Swiss cheese, divided
Instructions
- Preheat oven to 350°F. Melt butter in a large ovenproof skillet over medium heat. Add mushrooms and bell pepper; cook until crisp-tender. Add asparagus, and cook 1 minute. Remove from heat.
- Whisk together eggs, Parmesan, milk, and salt in a bowl; stir in 6 Tbsp Swiss cheese.
- Add egg mixture to skillet; cook over medium heat 4 minutes or until edges begin to set. Sprinkle with 6 Tbsp Swiss cheese.
- Transfer skillet to oven, and bake 15 minutes or until center is set.
