Southern Chicken Caesar Salad

Ingredients

  • 1 (15-oz) pkg prepared cornbread, cut into ½-inch pieces
  • ¼ cup butter, melted
  • 1½ lb chicken tenderloins, cut into 1-inch pieces
  • 1 tsp garlic salt
  • 2 Tbsp olive oil
  • 2 (17.8-oz) pkg Caesar salad kits
  • 1 (16-oz) can black-eyed peas, drained and rinsed
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat oven to 400°F. Toss cornbread with melted butter; spread in a single layer on a rimmed baking sheet. Bake 15 to 20 minutes or until toasted.
  2. Meanwhile, sprinkle chicken with garlic salt and desired amount of pepper. Cook chicken in hot oil in a large nonstick skillet over medium heat until done.
  3. Prepare salad kits according to package directions in a large bowl. Add black-eyed peas, tomatoes, and chicken; toss. Sprinkle with cornbread croutons.
