Ham and Grits Casserole
Orange-Pomegranate Salad
Ingredients
- 1½ cups quick-cooking grits
- 8 oz diced lean ham
- 1¼ cups shredded reduced-fat sharp Cheddar cheese, divided
- 1 cup egg substitute
- ⅛ tsp cayenne pepper
Instructions
- Preheat oven to 350°F. Cook grits according to package directions.
- Stir in ham, ¾ cup cheese, egg substitute, and pepper.
- Pour into a baking dish coated with cooking spray. Bake 25 to 30 minutes or until knife inserted comes out clean; sprinkle with ½ cup cheese.

- 6 oranges, peeled and sectioned
- ¾ cup pomegranate arils
Side Dish Instructions
- Combine oranges and pomegranate arils in a bowl; toss.
