Ham and Grits Casserole

Ingredients

  • 1½ cups quick-cooking grits
  • 8 oz diced lean ham
  • 1¼ cups shredded reduced-fat sharp Cheddar cheese, divided
  • 1 cup egg substitute
  • ⅛ tsp cayenne pepper

Instructions

  1. Preheat oven to 350°F. Cook grits according to package directions.
  2. Stir in ham, ¾ cup cheese, egg substitute, and pepper.
  3. Pour into a baking dish coated with cooking spray. Bake 25 to 30 minutes or until knife inserted comes out clean; sprinkle with ½ cup cheese.

  • 6 oranges, peeled and sectioned
  • ¾ cup pomegranate arils

Side Dish Instructions

  1. Combine oranges and pomegranate arils in a bowl; toss.
