Sweet & Smoky Barbecue Chicken Sandwiches

Tangy Angel Hair Coleslaw

Ingredients

  • 1½ cups diced red onions
  • 1½ lb boneless skinless chicken breasts
  • 1 Tbsp canola oil
  • 1½ tsp ground cumin
  • 1½ tsp smoked paprika (or use regular paprika)
  • ¾ tsp ground cinnamon
  • ¾ cup barbecue sauce
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • 1½ tsp Worcestershire sauce
  • 6 whole wheat hamburger buns

Instructions

  1. Coat a 3- or 4-quart slow cooker with cooking spray. Place onions in slow cooker; arrange chicken on top of onions, overlapping slightly.
  2. Drizzle oil over chicken; sprinkle with cumin, paprika, and cinnamon. Cover and cook on LOW 8 hours.
  3. Shred chicken using 2 forks.
  4. Stir together barbecue sauce, vinegar, mustard, and Worcestershire sauce in a bowl. Add barbecue sauce mixture to chicken in slow cooker, stirring well. Cover and cook on HIGH 30 minutes.
  5. Serve chicken on buns with Tangy Angel Hair Coleslaw, if desired.

  • 2 Tbsp canola oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp sugar
  • ¼ tsp salt
  • ⅛ tsp pepper

  1. Combine all ingredients in a bowl; toss.
