Roasted Garlic-Butter Chicken
Green Beans with Pecans and Mashed PotatoesIngredients
- 2 Tbsp butter, softened
- 1 clove garlic, minced
- 1 Tbsp chopped fresh parsley
- 1 tsp lemon zest
- 1 lb bone-in, skin-on chicken breasts
Instructions
- Preheat oven to 425°F. Stir together butter, garlic, parsley, and lemon zest in a small bowl; rub mixture under and over skin on chicken breasts. Season lightly with salt and pepper.
- Place chicken, skin side up, on a rimmed baking sheet lined with parchment paper or foil. Bake 35 to 45 minutes or until chicken is browned and done.

- 1 (4-oz) pouch buttery homestyle mashed potatoes

- Melt butter in a skillet over medium heat, and add nuts; cook 5 minutes or until toasted and fragrant. Stir in beans and salt and pepper to taste.
