Ingredients

  • 1 Tbsp butter
  • ½ (13-oz) pkg smoked turkey sausage link, cut to ½-inch slices
  • ¼ cup chopped onion
  • 1 cup cauliflower crumbles
  • ½ cup frozen whole kernel corn 
  • ½ cup chopped red bell pepper
  • ½ (15-oz) can low-sodium black beans, drained and rinsed
  • 1½ tsp olive oil
  • 3 large eggs
  • ¼ cup mild salsa
  • ¼ cup shredded Mexican blend cheese
  • 1 green onion, chopped

Instructions

  1. Melt butter in a large, deep skillet over medium-high heat. Add sausage and onion; cook 5 minutes or until sausage is browned.
  2. Add cauliflower, corn, bell pepper, and beans. Cook 5 minutes, stirring occasionally, until cauliflower is tender.
  3. Meanwhile, heat oil in a large nonstick skillet over medium heat; crack 3 eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
  4. Serve eggs over sausage mixture with salsa, cheese, and green onion.
