Chicken Fried Cauli-Rice

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces (see Note)
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 3 large eggs, lightly beaten
  • 1 onion, diced
  • 2 carrots, shredded
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper
  • 1 (12-oz) pkg cauliflower crumbles
  • 2 Tbsp low-sodium soy sauce
  • ¼ cup chopped fresh cilantro

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 7 minutes or until well browned and no longer pink in center. Remove chicken, and keep warm.
  2. Heat 1 Tbsp oil in same skillet; add eggs. Cook, stirring constantly, until scrambled; remove eggs, and keep warm.
  3. Add 1 Tbsp oil to skillet. Add onion, carrots, garlic, and red pepper; sauté 5 minutes or until tender.
  4. Add cauliflower; cook, stirring often, 5 minutes or until cauliflower is tender.
  5. Stir in soy sauce, chicken, and scrambled eggs; cook 2 minutes longer or until thoroughly heated. Stir in cilantro.
