Chicken Fried Cauli-Rice
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces (see Note)
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 3 large eggs, lightly beaten
- 1 onion, diced
- 2 carrots, shredded
- 2 cloves garlic, minced
- ¼ tsp crushed red pepper
- 1 (12-oz) pkg cauliflower crumbles
- 2 Tbsp low-sodium soy sauce
- ¼ cup chopped fresh cilantro
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 7 minutes or until well browned and no longer pink in center. Remove chicken, and keep warm.
- Heat 1 Tbsp oil in same skillet; add eggs. Cook, stirring constantly, until scrambled; remove eggs, and keep warm.
- Add 1 Tbsp oil to skillet. Add onion, carrots, garlic, and red pepper; sauté 5 minutes or until tender.
- Add cauliflower; cook, stirring often, 5 minutes or until cauliflower is tender.
- Stir in soy sauce, chicken, and scrambled eggs; cook 2 minutes longer or until thoroughly heated. Stir in cilantro.
