Avocado-Turkey Sandwiches
Cucumber-Melon TossIngredients
- 8 (1-oz) slices multigrain bread
- 4 tsp reduced-fat mayonnaise
- 4 tsp Dijon mustard
- 4 oz deli sliced low-sodium turkey breast
- ½ (8-oz) block part-skim mozzarella cheese, thinly sliced
- 2 small avocados, sliced
- 1 cup angel hair coleslaw
- 4 tsp balsamic glaze
Instructions
- Toast bread, if desired. Spread mayonnaise and mustard on one side of 4 bread slices.
- Top remaining 4 slices with turkey, cheese, avocados, and slaw; drizzle with balsamic glaze. Cover sandwiches with bread slices, mayonnaise sides down.
Side Dish Ingredients
- 1 English cucumber, cut into chunks
- 1 (10-oz) pkg cubed cantaloupe
- ½ cup torn fresh basil
- 1 Tbsp balsamic glaze
Side Dish Instructions
- Toss together cucumber, cantaloupe, and basil in a serving bowl; drizzle with glaze.
