Avocado-Turkey Sandwiches

Ingredients

  • 8 (1-oz) slices multigrain bread
  • 4 tsp reduced-fat mayonnaise
  • 4 tsp Dijon mustard
  • 4 oz deli sliced low-sodium turkey breast
  • ½ (8-oz) block part-skim mozzarella cheese, thinly sliced
  • 2 small avocados, sliced
  • 1 cup angel hair coleslaw
  • 4 tsp balsamic glaze

Instructions

  1. Toast bread, if desired. Spread mayonnaise and mustard on one side of 4 bread slices.
  2. Top remaining 4 slices with turkey, cheese, avocados, and slaw; drizzle with balsamic glaze. Cover sandwiches with bread slices, mayonnaise sides down.

Side Dish Ingredients

  • 1 English cucumber, cut into chunks
  • 1 (10-oz) pkg cubed cantaloupe
  • ½ cup torn fresh basil
  • 1 Tbsp balsamic glaze 

Side Dish Instructions

  1. Toss together cucumber, cantaloupe, and basil in a serving bowl; drizzle with glaze.
