Strawberry-Avocado Toast

Greek Yogurt-Topped Berries

Ingredients

  • 1 lemon
  • 2 avocados
  • ⅛ tsp salt
  • 4 (1-oz) slices whole-grain bread, toasted
  • 1 cup sliced strawberries
  • ½ cup crumbled feta cheese
  • 1 Tbsp balsamic glaze
  • 2 Tbsp chopped fresh basil

Instructions

  1. Grate zest and squeeze juice from lemon. Mash avocados using a fork to desired consistency in a bowl; stir in lemon zest, lemon juice, and salt.
  2. Spread avocado over toasts; top with berries and cheese, and drizzle with glaze. Sprinkle with basil.

Side Dish Ingredients

  • ½ (16-oz) pkg strawberries, halved
  • 1 (11-oz) pkg blueberries
  • ¾ cup fat-free plain Greek yogurt
  • 1 Tbsp honey

Side Dish Instructions

  1.  Divide berries among 4 serving bowls; top with yogurt, and drizzle with honey.
