Bistro Flank Steak
Garlic-Spinach Mashed PotatoesIngredients
- 1½ lb flank steak, trimmed (or use skirt steak)
- 2 tsp pepper
- 2 tsp dry mustard
- 1 tsp garlic powder
- 1 tsp dried oregano
- ¾ tsp salt
Instructions
- Preheat broiler. Place steak on a broiler pan. Combine pepper, mustard, garlic powder, oregano, and salt. Rub mixture on steak.
- Broil steak 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
Side Dish Ingredients
- 1½ lb small red potatoes, halved
- 1 (5-oz) pkg spinach
- 1 (8-oz) carton sour cream
- ¼ cup butter, cut up
- 3 Tbsp garlic paste
- ¾ tsp pepper
- ½ tsp salt
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
- Toss potatoes with spinach in same pan. Add sour cream, butter, garlic paste, pepper, and salt. Mash with a potato masher to desired consistency.
