Garlic-Spinach Mashed Potatoes

Ingredients

  • 1½ lb flank steak, trimmed (or use skirt steak)
  • 2 tsp pepper
  • 2 tsp dry mustard
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ¾ tsp salt

Instructions

  1. Preheat broiler. Place steak on a broiler pan. Combine pepper, mustard, garlic powder, oregano, and salt. Rub mixture on steak.
  2. Broil steak 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.

Side Dish Ingredients

  • 1½ lb small red potatoes, halved
  • 1 (5-oz) pkg spinach
  • 1 (8-oz) carton sour cream
  • ¼ cup butter, cut up
  • 3 Tbsp garlic paste
  • ¾ tsp pepper
  • ½ tsp salt

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Toss potatoes with spinach in same pan. Add sour cream, butter, garlic paste, pepper, and salt. Mash with a potato masher to desired consistency.
