Basil Gremolata Pork Tenderloin

Ingredients

  • 1 pork tenderloin, trimmed (1 lb; see Note)
  • ¼ tsp pepper
  • ⅛ tsp salt
  • ¼ cup whole wheat panko breadcrumbs
  • ¼ cup finely chopped fresh basil
  • 2 Tbsp freshly grated Parmesan cheese
  • 1½ Tbsp extra virgin olive oil
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 425°F. Coat pork with cooking spray; sprinkle with pepper and salt. Cook pork in a large skillet over medium-high heat 5 minutes or until browned on all sides.
  2. Transfer pork to a foil-lined baking sheet. Bake 12 to 15 minutes or until a meat thermometer inserted into center reads 145°F. Meanwhile, combine panko, basil, cheese, oil, and lemon zest; serve over pork.

  • ½ cup whole wheat pearl couscous
  • 1 cup halved grape tomatoes
  • 2 Tbsp freshly grated Parmesan cheese
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • ⅛ tsp garlic salt

Side Dish Instructions

  1. Cook couscous according to package directions; stir in remaining ingredients.
