Slow Cooker Chicken Cacciatore

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 3-inch pieces
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 red onion, sliced
  • 1 red or green bell pepper, sliced
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper

Instructions

  1. Sprinkle chicken with salt and pepper. Place in a 4-quart slow cooker coated with cooking spray.
  2. Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.
  3. Serve over Egg Noodles.

  • 1½ tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook noodles according to package directions.
  2. Toss hot cooked noodles with oil, salt, and pepper.
