Maple-Glazed Grilled Sausages

Ingredients

  • 1 zucchini, cut into 2-inch chunks
  • 1 red bell pepper, cut into 2-inch chunks
  • 1 (8-oz) pkg whole mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 3 fully cooked spinach and feta chicken-turkey sausage links
  • 2 Tbsp maple syrup

Instructions

  1. Preheat grill to medium-high heat. Thread zucchini, bell pepper, and mushrooms onto metal or bamboo skewers; stir together oil and vinegar.
  2. Place sausages and kabobs on a grill rack coated with cooking spray.
  3. Grill sausages, covered, 8 to 10 minutes, turning occasionally and basting with maple syrup.
  4. Grill kabobs 8 to 10 minutes, turning occasionally, and basting with oil and vinegar mixture.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • 2 peaches, cut into wedges (peeled, if desired)
  • 2 Tbsp honey mustard dressing
  • ¼ cup sliced almonds, toasted
  • ½ (4-oz) wedge blue cheese, crumbled

Side Dish Instructions

  1. Toss together greens, peaches, and dressing in a bowl. Top with nuts and cheese.
