Sweet Potato Fries

Ingredients

  • 4 slices center cut bacon, halved
  • 1 small tomato, sliced
  • ½ cup shredded sharp Cheddar cheese
  • ¼ cup crumbled feta cheese
  • 4 slices Italian bread
  • 2 tsp everything bagel seasoning
  • 2 tsp olive oil

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Divide bacon, tomato, and cheeses between 2 bread slices. Sprinkle with seasoning; top with 2 bread slices.
  3. Cook sandwiches in hot oil in large skillet 3 to 4 minutes per side or until golden brown.

  • ⅓ (20-oz) pkg frozen sweet potato fries

Side Dish Instructions

  1. Bake fries according to package directions. Keep remaining fries frozen for another meal.
