Ingredients

  • ¼ cup chopped fresh parsley
  • 2 Tbsp chopped walnuts
  • 2 Tbsp capers
  • 2 tsp paprika
  • 1 large egg white
  • ½ cup panko breadcrumbs
  • ¾ lb ground chicken (or use ground turkey)
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 425°F. Combine parsley, nuts, capers, and paprika in a bowl. Whisk in egg white. Add panko and chicken; gently mix together using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet.
  3. Bake 10 minutes or until chicken meatballs are no longer pink in center, shaking pan after 5 minutes.
  4. Meanwhile, heat marinara sauce until warm. Serve sauce over meatballs.

  • 2 oz whole wheat spaghetti
  • 2 tsp olive oil
  • 1 (12-oz) pkg green beans
  • ½ tsp Italian seasoning
  • Dash of salt

Side Dish Instructions

  1. Cook pasta according to package directions. Toss together pasta and oil in a bowl.
  2. Meanwhile, cook beans according to package directions. Toss beans with seasoning and salt.
