Herbed Chicken Meatballs
Whole Wheat Spaghetti and Green Beans

Ingredients
- ¼ cup chopped fresh parsley
- 2 Tbsp chopped walnuts
- 2 Tbsp capers
- 2 tsp paprika
- 1 large egg white
- ½ cup panko breadcrumbs
- ¾ lb ground chicken (or use ground turkey)
- 1 cup marinara sauce
Instructions
- Preheat oven to 425°F. Combine parsley, nuts, capers, and paprika in a bowl. Whisk in egg white. Add panko and chicken; gently mix together using your hands.
- Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet.
- Bake 10 minutes or until chicken meatballs are no longer pink in center, shaking pan after 5 minutes.
- Meanwhile, heat marinara sauce until warm. Serve sauce over meatballs.

- 2 oz whole wheat spaghetti
- 2 tsp olive oil
- 1 (12-oz) pkg green beans
- ½ tsp Italian seasoning
- Dash of salt
Side Dish Instructions
- Cook pasta according to package directions. Toss together pasta and oil in a bowl.
- Meanwhile, cook beans according to package directions. Toss beans with seasoning and salt.
