Garlic Beef and Bell Pepper Skillet

- 1 lb boneless top sirloin steak, thinly sliced
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp vegetable oil, divided
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- ½ onion, thinly sliced
- 6 Tbsp low-sodium beef broth
- 2 Tbsp balsamic vinegar
Instructions
- Sprinkle steak with salt and pepper; cook in ½ Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef from pan.
- Add 1 Tbsp oil, bell pepper, and onion to pan. Cook 6 minutes or until vegetables are tender.
- Stir in beef mixture, broth, and vinegar. Reduce heat, and simmer 5 minutes.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- ¾ cup halved grape tomatoes
- ¼ cup blue cheese dressing
Side Dish Instructions
- Toss together all ingredients in a bowl. Season with pepper to taste.
