Apple Butter Pork Chops

Ingredients

  • 1½ lb boneless center cut pork loin chops
  • ¾ tsp dried thyme
  • ½ tsp salt
  • 2 Tbsp olive oil, divided
  • 2 apples, sliced
  • 1 cup apple butter
  • ½ cup heavy cream

Instructions

  1. Sprinkle pork with thyme and salt. Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Remove pork from skillet; keep warm.
  2. Cook apples in 1 Tbsp hot oil in same skillet over medium-high heat 5 to 7 minutes or until tender. Add apple butter, cream, and pork to skillet. Cook 2 minutes or until thickened.

Side Dish Ingredients

  • 1 lb Brussels sprouts, halved
  • 3 Tbsp olive oil
  • 2 tsp Italian seasoning
  • 1½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 (3.5-oz) pouches boil-in-bag brown rice

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together Brussels sprouts, oil, Italian seasoning, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until tender, stirring once after 8 minutes.
  3. Meanwhile, cook rice according to package directions.
