Apple Butter Pork Chops
Brown Rice and Roasted Brussels SproutsIngredients
- 1½ lb boneless center cut pork loin chops
- ¾ tsp dried thyme
- ½ tsp salt
- 2 Tbsp olive oil, divided
- 2 apples, sliced
- 1 cup apple butter
- ½ cup heavy cream
Instructions
- Sprinkle pork with thyme and salt. Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Remove pork from skillet; keep warm.
- Cook apples in 1 Tbsp hot oil in same skillet over medium-high heat 5 to 7 minutes or until tender. Add apple butter, cream, and pork to skillet. Cook 2 minutes or until thickened.
Side Dish Ingredients
- 1 lb Brussels sprouts, halved
- 3 Tbsp olive oil
- 2 tsp Italian seasoning
- 1½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- 2 (3.5-oz) pouches boil-in-bag brown rice
Side Dish Instructions
- Preheat oven to 450°F. Toss together Brussels sprouts, oil, Italian seasoning, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until tender, stirring once after 8 minutes.
- Meanwhile, cook rice according to package directions.
