Upside-Down Pizza Skillet

Mixed Greens and Pear Salad

Ingredients

  • ½ lb ground beef
  • ½ lb ground Italian pork sausage
  • ¼ cup chopped onion
  • ⅛ tsp crushed red pepper
  • ½ (14-oz) jar gluten-free pizza sauce
  • ¼ cup water
  • ½ (4-oz) pkg gluten-free seasoned croutons
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook beef, sausage, onion, and red pepper in a large skillet over medium heat, stirring until beef is browned and crumbly; drain and return to skillet.
  2. Stir in pizza sauce and water; bring to a boil, reduce heat, and simmer 2 minutes. Top meat mixture with croutons, and sprinkle with cheese. Cover and cook 3 to 4 minutes or until cheese is melted.

Side Dish Ingredients

  • 2 Tbsp extra virgin olive oil
  • ½ tsp honey
  • ¼ tsp Dijon mustard
  • 1 small pear, thinly sliced
  • 1½ Tbsp lemon juice
  • 1 (5-oz) pkg mixed greens  

Side Dish Instructions

  1. Whisk together oil, honey, and mustard in a large bowl. Toss pear with lemon juice. Add pears and mixed greens to bowl; toss.
