Chicken and Rice Broccoli Bake
Sliced Peaches and BlueberriesIngredients
- ½ cup long-grain brown rice
- 2 boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 (12-oz) pkg broccoli florets
- 1 small onion, chopped
- ½ cup low-sodium chicken broth
- ¼ cup sour cream
- ½ cup shredded Cheddar cheese
- ¼ tsp salt
- ¼ tsp freshly ground pepper
Instructions
- Preheat oven to 400°F. Cook rice according to package directions.
- Drizzle chicken with oil in a lightly greased baking dish. Bake 25 minutes or until done. Cool and shred chicken.
- Meanwhile, microwave broccoli according to package directions.
- Stir together rice, broccoli, chicken, onion, broth, sour cream, ¼ cup cheese, salt, and pepper. Spoon into a lightly greased 8-inch baking dish; sprinkle with ¼ cup cheese.
- Bake 20 minutes or until bubbly.

- 2 organic peaches, sliced (or use 3 nectarines)
- 1 (4.4-oz) pkg blueberries, rinsed and well chilled
