Chicken and Rice Broccoli Bake

Ingredients

  • ½ cup long-grain brown rice
  • 2 boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • 1 small onion, chopped
  • ½ cup low-sodium chicken broth
  • ¼ cup sour cream
  • ½ cup shredded Cheddar cheese
  • ¼ tsp salt
  • ¼ tsp freshly ground pepper

Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Drizzle chicken with oil in a lightly greased baking dish. Bake 25 minutes or until done. Cool and shred chicken.
  3. Meanwhile, microwave broccoli according to package directions.
  4. Stir together rice, broccoli, chicken, onion, broth, sour cream, ¼ cup cheese, salt, and pepper. Spoon into a lightly greased 8-inch baking dish; sprinkle with ¼ cup cheese.
  5. Bake 20 minutes or until bubbly.

Side Dish Ingredients

  • 2 organic peaches, sliced (or use 3 nectarines)
  • 1 (4.4-oz) pkg blueberries, rinsed and well chilled

Side Dish Instructions

  1. Combine peaches and berries in a bowl.
