Unstuffed Cabbage Rolls

Ingredients

  • ¾ lb grass-fed ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ head cabbage, chopped
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 (8-oz) can tomato sauce
  • ½ (10-oz) pkg shredded carrots
  • ½ cup organic chicken broth
  • ½ tsp crushed red pepper
  • ¼ tsp ground cinnamon
  • 1½ tsp fresh lemon juice
  • ½ tsp raw honey

Instructions

  1. Cook beef, onion, and garlic in a Dutch oven over medium heat, stirring until beef is browned and crumbly. Drain and return to pot.
  2. Stir in cabbage, tomatoes, tomato sauce, carrots, broth, red pepper, and cinnamon. Bring to a boil; cover, reduce heat, and simmer 30 minutes, stirring occasionally, until cabbage is tender.
  3. Stir in lemon juice and honey; season with salt and pepper to taste.
