Easy Burrito Casserole
Little Oranges and Guacamole with Chips
Ingredients
- 1½ lb ground beef (or use ground turkey)
- 1 (15-oz) can refried beans
- 1 (10.5-oz) can cream of chicken soup
- 1 (8-oz) carton sour cream
- 1 (1-oz) envelope taco seasoning
- 8 burrito-size flour tortillas
- 3 cups shredded Mexican-blend cheese
Instructions
- Preheat oven to 350°F. Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet.
- Stir in beans, soup, sour cream, and seasoning.
- Tear tortillas into 2-inch pieces. Arrange half of tortillas in bottom of a lightly greased 13- x 9-inch baking dish. Top with half of meat mixture and 1½ cups cheese. Repeat layers.
- Bake 20 to 30 minutes or until hot and bubbly.
Side Dish Ingredients
- 6 (4-oz) cups mandarin oranges, chilled
- 1 (8-oz) container guacamole
- 1 (11-oz) pkg tortilla chips
Side Dish Instructions
- Serve oranges and guacamole with chips on each plate.
