Pumpkin Pancakes

Ingredients

  • 2 cups pancake mix
  • 2 Tbsp vegetable oil (or use 2 Tbsp melted butter)
  • 2 cups water
  • 1 cup pumpkin puree
  • 2 Tbsp sugar
  • ½ tsp ground cinnamon
  • 1 (24-oz) bottle syrup
  • 2 Tbsp butter, melted
  • 1 pkg granola (any type)

Instructions

  1. Stir together pancake mix, oil, and water in a bowl. Stir in pumpkin, sugar, and cinnamon until blended.
  2. For each pancake, drop batter by ¼ cupfuls onto a greased, hot griddle. Cook until bubbles form on top and edges look dry. Turn and cook 1 minute or until golden brown.
  3. Serve pancakes with syrup and melted butter. Sprinkle with granola.

Side Dish Ingredients

  • 1 (12-oz) pkg bacon

Side Dish Instructions

  1.  Cook bacon in a large nonstick skillet over medium heat until crisp. Drain.
